Smashburger

Ingredients

Smashburgers

  • 1 pound 80/20 ground beef

  • Kosher salt

  • Freshly cracked black pepper

  • Accent

  • 4 slices American cheese

  • 2 potato buns, split

  • 2 tablespoons unsalted butter, softened

  • ¼ cup finely shredded iceberg or butter lettuce

  • 4 to 6 dill pickle chips

  • Minced chives, optional

Secret Sauce

  • 3 tablespoons mayonnaise

  • 1 tablespoon ketchup

  • 1 teaspoon Dijon mustard

  • 1 teaspoon champagne vinegar

  • 1 teaspoon sweet relish

  • Pinch smoked paprika

  • Pinch garlic powdert

Instructions

Make the Secret Sauce

In a small bowl, whisk together mayonnaise, ketchup, Dijon, champagne vinegar, relish, smoked paprika, and garlic powder. Refrigerate until ready to use.

Smash and Cook the Burgers

  1. Divide the ground beef into four loose balls. Do not pack tightly.

  2. Heat a cast iron or stainless steel skillet over high heat until very hot.

  3. Place two beef balls into the skillet and immediately smash flat using a sturdy spatula. Hold pressure for 10 to 12 seconds.

  4. Season generously with salt and pepper and a light sprinkling of Accent.

  5. Cook undisturbed until deeply browned and crisp at the edges, about 2 minutes.

  6. Flip, top each patty with a slice of American cheese, and cover briefly to melt.

  7. Repeat with remaining patties.

Toast the Buns

Spread butter on the cut sides of the buns and toast in a skillet until golden brown.

Assemble

  1. Spread secret sauce on the bottom bun.

  2. Add shredded lettuce and pickle chips.

  3. Stack two cheesy smash patties on each bun.

  4. Finish with the top bun and garnish with chives if desired.

Serve immediately.
