Orange Chicken

Crispy Orange Chicken
Serves 4

Chicken

  • 1.5 lbs chicken breast or thigh, cut 1 inch pieces

  • 1 tsp kosher salt

  • 1 tsp soy sauce

  • 1 tsp garlic powder

  • 1 egg

  • 1 cup cornstarch

  • Oil for frying

Orange Sauce

  • 1 cup fresh orange juice

  • Zest of 1 orange

  • 3 tbsp sugar (or honey)

  • 3 tbsp soy sauce

  • 2 tbsp rice vinegar

  • 1 tbsp Shaoxing wine (or chicken broth)

  • 2 garlic cloves, minced

  • 1 tsp grated ginger

  • 1 tsp sesame oil

  • 1 tbsp cornstarch + 2 tbsp water

To serve
Steamed white rice, broccoli, scallions, sesame seeds

Instructions

  1. Toss chicken with salt, soy sauce, garlic powder. Add egg and coat.

  2. Add cornstarch and toss until dry and fully covered.

  3. Heat oil to 350 F. Fry 4-5 minutes until crisp.

  4. Let rest 5 min, then double fry 1-2 min.

  5. Combine all sauce ingredients except the slurry. Simmer.

  6. Whisk in slurry and cook to glossy.

  7. Toss chicken in sauce just before serving to keep it crispy.

  8. Serve over rice with broccoli. Garnish.
