Oven Roasted Dungeness Crab

Ingredients:
2 Dungeness crabs, cleaned and separated
1 cup unsalted butter (1/2 cup to start the recipe and 1/2 cup to finish)
1/4 cup olive oil
3 shallots, finely chopped
6 large cloves garlic, minced
2 teaspoons red pepper flakes
1/2 cup fresh parsley, chopped
1 lemon
1 1/2 teaspoons lemon zest
Salt and freshly ground black pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C). 
- Remove the legs and clean and separate the body of the crab. Set aside. 
- In a large oven proof sauté pan, heat the olive oil over medium heat. Add 1/2 cup of the butter, shallots, garlic, and red pepper flakes. Cook until the shallots are translucent and the garlic is fragrant, about 3-4 minutes. 
- Turn off the heat and add the cleaned crab to the same pan into the oil and butter mixture making sure all parts are well coated. 
- Roast the crabs in the preheated oven for about 15 minutes, flipping over once halfway through the roasting process. 
- Pull the crab from the oven and remove it from the roasting pan. Place the crab in a large bowl and cover with a clean towel to keep warm. Keep the sauce that the crab was cooked in in the same saute pan. 
- Place pan on medium heat and add the other 1/2 cup of butter, the juice of one lemon, the lemon zest, and a couple of dashes of salt and pepper. Heat until combined and thickened. Remove from heat. 
- Pour the sauce onto the crab and toss to insure crab is well coated. Garnish with chopped fresh Italian parsley. 
- Serve your Oven-Roasted Dungeness Crab immediately, accompanied by fresh lemon wedges and a crusty baguette for soaking up the delicious butter and herb mixture.
