Grilled Lamb Chops with Tzatziki Sauce
Ingredients:
For the Lamb Chops:
- 8 lamb chops (about 1 inch thick) 
- 2 tablespoons olive oil 
- 1 1/2 teaspoons salt 
- 1 teaspoon black pepper 
- 1 teaspoon garlic powder 
For the Tzatziki Sauce:
- 1 cup Greek yogurt (full-fat preferred) 
- 1 small cucumber, grated and squeezed of excess water 
- 2 cloves garlic, minced 
- 1 tablespoon lemon juice 
- 1 tablespoon fresh dill, chopped 
- 1 tablespoon fresh mint, chopped 
- 1 tablespoon olive oil 
- Salt and pepper to taste 
Instructions:
- Prepare the Lamb Chops: - Preheat your grill to medium-high heat. 
- Pat the lamb chops dry with paper towels and rub both sides with olive oil. 
- In a small bowl, mix together salt, black pepper, and garlic powder. Season both sides of the lamb chops evenly with the spice mixture. 
 
- Make the Tzatziki Sauce: - In a medium bowl, combine the Greek yogurt, grated cucumber (make sure to squeeze out as much moisture as possible), minced garlic, lemon juice, olive oil, and fresh dill and fresh mint. 
- Season with salt and pepper to taste, and mix everything together until well combined. 
- Refrigerate the tzatziki until ready to serve. 
 
- Grill the Lamb Chops: - Place the lamb chops on the preheated grill. 
- Grill for about 4-5 minutes per side, depending on the thickness of the chops and your preferred doneness (for medium-rare, cook to an internal temperature of 135°F). 
- Remove from the grill and let the lamb chops rest for 5 minutes before serving. 
 
- Serve: - Serve the grilled lamb chops hot, with a generous dollop of tzatziki sauce on the side. 
- Optionally, garnish with extra fresh dill or lemon wedges.
