Creamy Tomato Parmesan Soup with Three Cheese Grilled Sandwich

Creamy Tomato Parmesan Soup

Serves 4-6

Ingredients:
2 tbsp olive oil
1 small yellow onion, diced
2 garlic cloves, minced
2 tbsp tomato paste
1 (28 oz) can San Marzano tomatoes
1 cup chicken stock
½ cup heavy cream
¾ cup grated Parmigiano-Reggiano
1 tbsp unsalted butter
Salt and pepper

Instructions:

  1. Heat olive oil over medium. Sweat onion with salt until translucent.

  2. Add garlic and cook 30 seconds.

  3. Stir in tomato paste and cook until deep brick red.

  4. Add tomatoes and stock. Simmer 20-25 minutes.

  5. Blend completely smooth.

  6. Return to low heat. Add cream, then whisk in Parm.

  7. Finish with butter. Adjust seasoning.

Three Cheese Grilled Sandwich

Makes 1 sandwich

Ingredients:
2 slices thick sourdough
2 oz sharp white cheddar, grated
1 oz Gruyère, grated
1-2 tbsp grated Parmigiano Reggiano
1 tbsp softened butter
1 tbsp mayonnaise

Instructions:

  1. Mix cheddar and Gruyère.

  2. Spread butter/mayo on outside of bread.

  3. Add cheese mixture inside. Light sprinkle of Parm inside.

  4. Press grated Parm onto exterior.

  5. Cook over medium-low heat 3-4 minutes per side until golden.

  6. Rest 1-2 minutes before slicing.
